The Skinny on Pork Stir Fry with Rice

Hello!  Sorry it’s been quiet around here.  I recently moved – well not completely yet – and things are in complete disarray!  I would love to share with you what we have been doing to the new place, but I’m really far behind.  So just to warn you – you may only be getting recipes from me for the next few posts.  But I promise – they will all be 5 star winner!

Today I’m sharing with you a new Skinny Recipe – Pork Stir Fry with Rice!  With rice you say?  How can you have rice and still make it low carb?!  Well, remember how the Pizza King and I made Cauliflower Crust Pizza a few months back?  This recipe pulls from the same cauliflower concept!

Here’s what you’ll need.

Ingredients:

  • 1 tbsp oil
  • 1 lb boneless pork chops, cut into strips
  • 2 cups frozen stir-fry vegetables
  • 1/4 cup zesty italian dressing
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 2 cups frozen cauliflower (serves 2)
  • 1 tbsp butter
  • 1 tsp salt

Directions:

In a large skillet, cook minced garlic and pork in oil for about 5 minutes on medium heat, or until lightly browned.

Add remaining ingredients and cook until vegetables are heated through.

While pork and vegetable mix are cooking, using a slap chop or cheese grater, make cauliflower ‘rice.’  In a microwave safe bowl, cook the cauliflower rice for 1 and a half minutes in the microwave.  Take out, stir, and garnish with butter and salt.  Microwave for an additional 1 and a half minutes.  Stir the rice, and split between two plate.

Pour stir fry over rice and enjoy!

Now, don’t hate on my plate – I told I JUST moved!  But really, this recipe was delicious!  And it deserves a 5 out of 5.

A Passion for Pinterest

It’s no secret to my friends that I am thoroughly obsessed with Pinterest.  Next to my Google Reader, Pinterest has become one of my favorite ‘down-time distractions.’

During a little ‘down-time’ today, I decided to take a look and see if anyone had pinned anything from my blog.  I know I am still in the beginning growth stages for my blog, so I didn’t expect to find anything.  And to my surprise there were so many pins!

And then I came across this specific pin – and it really put a big smile on my face!

How sweet!  Sometimes I feel like I am just a small voice in a large blogosphere.  But comments like these remind me how much I love what I do with Blueprint, and that my small voice is being heard :)

Love Rocks

This weekend, I got together with my good friends to do a little Valentine’s Day photo shoot starring their daughters, Miss Grace and Miss Raiden.  To make things fun, I brought a bunch of my jewelry, scarves, and other accessories that the girls could play around with.  The girls were absolutely hilarious!  And while they got their pictures taken, I managed to snap a few ‘on the set’ type photos:
